Garlic Basil Shrimp
I got a new cook book, So Easy by Ellie Krieger, and I had to test it out. Well, I kind of tried it out. I tweaked the recipe to make it work for 2 people and added ingredients. Recipes are just guidelines anyway
Garlic Basil Shrimp
1 tbs olive oil
3/4 lb Shrimp, peeled and deveined
1/2 cup asparagus, chopped into 1/4" pieces
2 cloves Garlic, minced
1/4 tsp Red Pepper Flakes, or adjust to your taste
3/4 cup tomato, diced
1/2 cup dry white wine
1/8 cup basil, finely chopped
1 1/2 cup cooked small pasta, like orzo
Heat the oil in a skillet over medium high heat. Add the shrimp and cook for 2 1/2 to 3 minutes until they are just cooked through. Remove the shrimp and set them aside.
Add the red pepper flakes and garlic to the pan and cook until fragrant, about 30 to 45 seconds. Add the asparagus and cook for 1 to minutes. Add the wine and turn the heat to high. Cook for 2 minutes. Stir in the tomatoes and the basil and add salt and pepper to taste. Add the shrimp back to the pan and cook until shrimp are heated through. Serve over the orzo.
"Recipes are just guidelines"... Amen! Lovin' this combo. Nice variety of colors and balance of flavors.

ReplyDeleteAfter reading your profile, I was wondering about the shrimp on the diet you talked about you were on, is this a source of diet food that helped that? I have read its high in cholestral, which I have...just wondering your take on this? Your story on weight loss is amazing!
Pegasuslegend, here is what I learned about shrimp. It is high in cholesterol, but it contains more good cholesterol, HDL, than bad. It will raise your cholesterol level but it raises good more than the bad. I would not eat it everyday, but a couple of times a month. When I do it eat it I only eat 6 to 8 shrimp. That stays with my philosophy of eat it all but it in moderation.
ReplyDeletethanks thats great information. I stopped eating shrimp for a long time now but love it!!, will now add a few to my menu again.... I am in a family of high blood press and cholestrol, do not eat half of what I make unless I substitute fat free...but make two ways for the family double the cooking all the time....hey thanks for this update very valuable info!
